It’s extremely well suited for cold infusions - the long, slow, cold extraction elevates the softer grassy notes.

When infused as a hot tea it is bright with intense green flavours.

Tasting Notes

Cold infusion - sweet and grassy with soft vegetal notes and a silky mouthfeel.

Hot infusion - still sweet, but more pronounced and bold vegetal notes with a syrup-like mouthfeel

Quantity

As a refreshing cold infusion, for the best results use 0.2 oz of leaf per 35.5 fl oz of water (6g per litre).

For a hot infusion use 0.1 oz of leaf per 5.5 fl oz of water (2g per 150ml).

Temperature

For a cold infusion, use room temperature filtered water, and place in the fridge after mixing.

For a hot infusion use 158°F (70°C) water.

Time

Cold: infuse for 8 hours (or overnight).

For a hot infusion, steep for 1 - 2 minutes, tasting regularly.

Infusions

You can infuse this tea at least twice. With each careful infusion, different subtleties of flavour are revealed.

24¢ per cup based on 0.1 oz of leaf per 5.1 fl oz of water and 2 infusions.

Why don't we use teaspoon measurements? We use weight measurements for tea because teaspoons can vary hugely in size, as do the tea leaves. Using weight means a consistently great infusion every time.
